Caramel Macadamia S’mores Frozen Yoghurt Sandwiches

Using Weis Caramel and Macadamia Creamy Frozen Yoghurt

  • 1L Weis Caramel and Macadamia Creamy Frozen Yoghurt
  • 10 x Digestive biscuits
  • 20 vanilla marshmallows, roughly chopped
  • 100g dark chocolate, melted

You will need to begin this recipe the day before.

Scoop frozen yoghurt into a bowl, allow to sit at room temperature 10-15 mins to soften.

Meanwhile, line a baking tray with alfoil.  Spread chopped marshmallows over the tray and place under a grill (high) for 4-5 mins or until they begin to blacken.  Set aside to re-set, then stir through the softened frozen yoghurt.

Spoon softened yoghurt into a 20cm square baking pan lined with baking paper.  Freeze overnight then turn out the ice cream and use a cookie cutter (roughly the same size as the Digestive biscuits) to cut 5 rounds.

Sandwich each round between 2 biscuits then dip into dark chocolate and place on a plate lined with baking paper.  Freeze at least 30 mins to set chocolate before serving.
