
There's nothing artificial about the rich, vibrant colour of our berry creations. It's just the result of using lots of real raspberries and strawberries. We prefer to use whole frozen berries so that we can inspect quality prior to pureeing to ensure we are working with the right grade of fruit. This means it must have exactly the right sweetness and acidity. When our team of taste testers' white coats turn purple and pink, you can be sure a new batch of berries has arrived.
Some berries have very delicate flavour profiles and need to be treated very carefully during processing. Strawberries, for example, look very rich and succulent but have a relatively subtle flavour when processed. The challenge is retaining a fresh strawberry flavour without ending up with a sickly sweet strawberry jam taste!
Raspberries are great to work with but the trick is balancing their tartness with the right amount of cream and sweetness.

Our Vanilla and Raspberries Bar is a fantastic recipe from Weis which combines real crushed raspberries blended with fresh cream and then poured over with rich vanilla bean cream and dollops of raspberry crush.
